Executive Chef - Fine Dining Restaurant

Attil'O Hospitality is launching a new premium multi-cuisine fine-dining establishment in Puducherry, seeking an accomplished Executive Chef with over 15 years of culinary leadership to direct all kitchen operations.

You will shape the culinary identity, oversee kitchen design, standardize recipes, build and mentor the team, and ensure top-tier execution across a 150-seat venue.

Key Expertise Required:

• Arabian, Persian, and Iranian cuisines
• Indian, Malabar, and North Indian specialties
• Kebabs, grills, barbecues, and tandoori items
• Biriyani and Mandi preparation
• Chinese cuisine and modern fusion concepts
• Trending shawaya dishes and premium desserts

Primary Duties:

• Manage full-scale kitchen operations for a 150-seat restaurant
• Design creative, authentic menus across diverse culinary traditions
• Recruit, train, and supervise kitchen personnel
• Control food costs, waste, and inventory tracking
• Enforce strict HACCP and food safety standards

Candidate Background:

• 15+ years of experience as an Executive Chef or Head Chef
• Proven multi-cuisine proficiency
• Prior background in pre-opening restaurant projects is a strong advantage
